Why does it unlock on its own?!
3 times now, I've left the chinook for a few days in the airport parking lot. 3 times now I come back to an unlocked chinook!? 1st time I thought maybe I just forgot. The past 2 I've been double sure it's locked before I leave. I don't know how long it sits before unlocking itself, but this is no good.

Any you saw the door locks lock when before you walked away?
So, ruling out the "operator error" such as hitting the unlock button or putting the remote in a pocket and the unlock button getting depressed by something........
Is this the Marksmen remote key entry system that came with the Chinook? You can try resetting the receiver in the van and reprogramming it to your remote(s). Pop the drivers side knee panel off and the receiver is the black box. If you need the reprogramming instructions I can post them.

These are my notes when I programmed a second remote:
Remove the driver’s side knee panel which just pops of with spring push pins across the top and the bottom. Locate the Marksman keyless entry module (see picture). There is no Valet switch installed just the pins for the harness. Jump these two pins to put the module in programming mode. Did this using the tip of a pair of needlenose pliers. Jump the pins 6 times with the ignition on and it will put the module in Auto Channel mode which is the two-button config (one for On and another button for Off). Then push any button on one remote fob, there will be a relay click (the horn relay which isn’t hooked up) signifying the key fob was programmed, then push any button on the second remote fob (if you have one), and turn off the ignition for ten seconds.

awesome.. now to find and order another remote. (don't suppose one from autozone would work? it has to be a marksman brand yes?)
back to my original issue though.. it may have something to do with leaving the 12v on. I didn't used to do this, but I have been recently. This last time I was only gone about 48 hrs. Guess I'll have to test it with 12v off. NOt sure if the house battery bank some how triggers the locks (?)

I doubt that a low coach battery would set off an auto-unlock because the Marksman keyless entry module is powered off of the van battery.
The optional "Luxury Package" included the keyless entry system (just including this to make you feel special).
Normally I'd say that a remote is going to broadcast a specific radio frequency and the signal will be coded in a certain way so best to get a Marksman remote. Better safe than sorry. But....I was thinking about it and that Marksman is buying subcomponents to make their products so there is likely a supplier of those remotes.
I did a little research and these Chinook Marksman remotes look to be a Megatronix MT66 remote on the 310Mhz frequency. You will need this kind of remote but they are plentiful and you might get lucky to find one at an autoparts place. But they seem to be plentiful on the internet for about $25 each.

Just happened while I was in it. After about 3hrs. From 10pm till when it just unlocked at 1am for no reason. Crap.

Ah ha.. Googled and found
"1. "Ghost" unlocking of doors every day or so. (programmed the fob #3 and fob #4 positions with the two physical fobs so each fob is in the system twice removing the two unused fob positions in the system). This was the fix that George Poulsen posted last year from info that he got from the keyless system manufacturer.
2. Map reading lights would be on for 10 minutes after locking the RV with no way to turn them off - their switches would not override. Now they only come on with their adjacent switches.
3. Doors would auto-lock 30 seconds after the last door was closed. I had to break the window vent to get in once when it locked me out after just closing the door. Now only the fob locks/unlocks the RV - no "helpful" timers to lock me out.
4. The "bell/ding" would ring for an annoyingly long time when the door was unlocked and then opened (45 seconds?). Now it just stays quiet.

Interesting. I followed this:
1) ignition on
2) needle nose to the thingie under the steering column 6 times
3) hit lock button on remote 1
4) then 2
5) then 1
6) then 2
7) ignition off for 10 seconds
Now only the lock button does anything on the 4 button remotes. The lock button acts like a toggle. Locked then unlock. Which is fine.. Just not sure why my unlock button on the remote(s) became useless.
